Oven Baked Giant Beans (Gigantes)
500gr Greek Organic Giant Beans Nestoras
2 dry onions finely chopped
4 cloves of garlic finely chopped
150ml EVOO Belià
2 organic bay leaves Myrovolos
1 big carrot finely chopped
300gr finely chopped tomatoes
1/2 tablespoon smoked aridaia paprika
1/2 tablespoon sugarcane syrup
Freshly ground pepper
Put the giant beans in a large bowl with cold water and let them soak overnight. Make sure the beans are of good quality, otherwise they will not boil and they will be hard and tasteless!
The next day, we rinse with plenty of water and we put them in cold water to boil. They will need to boil for about 1 hour. We might need to remove the foam from the surface with a big spoon, during the boiling.
After they boil, we put the beans in a large baking pan (ideally ceramic) and we add all the ingredients (except the parsley). We spread them evenly on the pan and add lukewarm water, enough to cover 2/3 of the mixture thickness.
In a preheated oven to 180 C, we put the pan covered with a lid or aluminum foil. This way the beans will cook inside out, without getting too dry on the outside and remaining raw inside.
After one hour in the oven, try them with a spoon. They should be tender and have a chestnut kind of texture. If not, leave them for 15-20 minutes more. This depends also in the oven (resistances, air heated).
Once they're ready, serve them with freshly chopped parsley, fresh home baked bread and feta!
